Moroccan Hummus Cups

Last week I made & served these cute cups at Benjamin's school. It was for an international food buffet for the teachers. I wanted to share it because they turned out so nice & this recipe was super easy.




1 container 7 oz plain hummus spread
1 tbsp Moroccan Rub
1 plum tomato, chopped
1 seedless cucumber, chopped
1/4 cup pitted kalamata olives, chopped
2 tbsp packed fresh parsley leaves, chopped
24 miniature tortilla chip cups
1/3 cup plain yogurt (I used Greek yogurt...YUM)

Combine hummus & rub. Set aside. Combine tomato, cucumber, olives, & parsley leaves. Set aside. Pipe hummus into tortilla chip cups. Spoon yogurt over hummus. Divide cucumber mixture evenly among cups. Serve & enjoy!

a special treat

Russell and I got to hear the famous Italian tenor, Andrea Bocelli perform in Austin the weekend before Valentine's Day. It was simply amazing...to hear in person. We also thought it was pretty neat that Benjamin's music teacher was singing bass in the choir behind the orchestra. We had good seats, but couldn't get good pictures because of the lighting. I've included a few video clips I found from youtube from his concert in Austin. Thank you, wonderful husband, for a special & relaxing evening together!

Valentine's Day 2012...

It's always a great day when you get to have a party at school! (according to Benjamin). Thankfully his party did NOT involve candy....1 cupcake for each kid, then fresh fruit & veggies to fill up the rest of the plate. I'm so thankful his school is health conscious. We enjoyed a few sweets at home that evening (I had fun dipping strawberries & making cookies, however it was nice not to have a boy on sugar overload. Chuggington items from the Target $1 bins were a great hit as well as the glow sticks. It was fun. Papa went along to help at the school party & to see inside his school. Thanks Papa!







Next up...my hubby's valentine's gift(s) to me. He probably won't be able to top it next year, but that's okay. I will not complain!

Amy pinned this on pinterest, and I absolutely love it! I've printed mine out & will have them finished by tomorrow. Then I plan to put them in the boys' memory folders. This is so much better than something store bought, don't you agree?

100 days!



100 days of school have come & gone this week. Simply unbelieveable. He is loving school so much. His grades are great. And he'll tell you he's only had 1 bad day at school so far (he was caught talking during nap time to his little friend Presley). It makes me laugh. I have to study in order to help him with his homework....not for the math, reading, or writing assignments but the key concepts questions (form, function, cuasation, reflection, & responsibility) and learner profiler questions. It's good though...I'm learning with him! Congrats to our big boy...100 days smarter. I can tell a difference.

We read a lot in our house...I love reading to both boys - together & separately. The picture above shows some of his current favorite books. Several came from sweet aunties...thank you!! I'll be doing a post soon on Trevin's favorite books. Stay tuned. :)

Pilot Jax

The highly anticipated 3rd birthday party for little friend Jax was this past weekend. We all had a grand time & the decorations were simply amazing. Becca did such a great job. The boys still talk about all the fun they had at the birthday "pautee" (Trevin's word). Trevin didn't protest too loudly when I got to hold little sister. Ahhh...what a sweet, beautiful little girl. a great find

I've found that lots of people like this skirt on pinterest. I do too...however I do not sew - no time or energy for that at this point. To my surprise I found a very cute navy blue long ruffle skirt (not denim) at Marshalls last week for a decent price. Brand - Max Studio. It found it's way to my closet....yay! If you have a Marshalls close by you'll have to check out this skirt.

a favorite lunch



This is my favorite lunch this week - quinoa with fresh fruit mango salsa. Very tasty & healthy too. I'm enjoying quinoa for breakfast (heated with a few nuts & berries) as an alternative to oatmeal. The boys really like oatmeal for breakfast, but I need variety! So this is a great option.
